cups cooked rice

chicken breasts, cooked and diced

oz. frozen broccoli

can cream of chicken soup, or homemade
½
cup milk
½
cup mayonnaise

cups grated Cheddar cheese

Tbsp. lemon juice
Spread
rice in a 9x13 pan. Evenly layer chicken and broccoli over rice. Mix soup,
milk, mayonnaise, 1 cup of cheese, and lemon juice. Pour and spread over
chicken and broccoli. Sprinkle remaining cheese over top.
Bake
at 350° for 30 minutes.

Condensed Cream of Chicken Soup

cup chicken stock
½
cup milk
¼
cup butter
¼
cup flour
½
tsp salt
¼
tsp pepper
¼
tsp garlic powder
¼
tsp onion powder
1/8
tsp dried thyme
Melt
butter in saucepan, stir in flour. Cook 1 minute. Whisk in milk until smooth,
then whisk in chicken broth. Add seasoning. Simmer until thickened. Use in
recipes calling for 1 can condensed cream of chicken soup.
