Crockpot Roast Chicken

2 tsp. paprika
1 tsp. salt
1 tsp. onion powder
1 tsp. thyme
½ tsp. garlic powder
¼ tsp. black pepper
1 onion
1 large chicken

Roughly chop onion. Remove giblets from chicken cavity. Combine spices, rub on chicken. Place seasoned chicken on top of onions in crockpot. Cook on high for 4-5 hours. Chicken will be falling off the bones when done.


*Don’t forget to make super simple homemade chicken stock in the crockpot with the chicken bones. Also, I usually pick enough chicken off the bones to make a second meal, either Chicken Pot Pie or Chicken Noodle Soup with the leftover chicken and homemade stock.
